Creamy Cucumber Salad

A light and refreshing salad featuring cucumbers and a creamy dressing, perfect for summer gatherings.

Ingredients

  • 2 large cucumbers (peeled and thinly sliced)
  • 1 sweet onion (thinly sliced)
  • 1 tablespoon sea salt
  • 1 ½ cups mayonnaise (or more to taste)
  • 2 tablespoons vinegar
  • 1 tablespoon white sugar
  • 1 teaspoon dried dill weed
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper

Instructions

  1. Slice the Cucumbers and Onion: In a large bowl, get those cucumbers and sweet onion ready. Peel the cucumbers first, if desired, and then slice them thinly using a sharp knife or mandoline for perfect uniformity. Add them to the bowl and sprinkle with sea salt.
  2. Make the Dressing: In a separate mixing bowl, combine the mayonnaise, vinegar, sugar, dill weed, garlic powder, and black pepper. Stir it all together until smooth.
  3. Combine It All: Pour the dressing over the cucumber and onion mixture. Gently toss everything together until well-coated.
  4. Chill and Serve: Cover your bowl with plastic wrap and pop it into the fridge for at least 30 minutes to allow the flavors to marinate and deepen.

Notes

For a lighter version, Greek yogurt can be used in place of mayonnaise. This salad is great made a few hours in advance or the night before.
