The Ultimate Zucchini Fritters

Crispy, cheesy zucchini fritters that are a comforting and nostalgic dish, perfect for any occasion.

Ingredients

  • 2 cups shredded zucchini
  • 1/2 cup all-purpose flour
  • 1/2 cup grated cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Shred the zucchini using a box grater or food processor.
  2. Squeeze the shredded zucchini in a clean kitchen towel to remove excess moisture.
  3. In a large mixing bowl, combine the shredded zucchini, flour, cheese, breadcrumbs, and egg. Season with salt and pepper.
  4. Heat about 1/4 inch of oil in a large skillet over medium heat.
  5. Form small patties of the zucchini mixture, about 2-3 inches in diameter, and place them in the hot oil.
  6. Fry for about 3-4 minutes on each side until golden brown.
  7. Remove fritters with a slotted spatula and place them on paper towels to absorb excess oil.
  8. Serve hot with your choice of dipping sauce.

Notes

For a gluten-free version, use chickpea flour. You can replace the egg with a flax egg for a vegan option.
