Crispy Zucchini Patties

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Prep the zucchini: Grate the zucchini and wring out excess moisture.
  2. Mix ingredients: Combine all ingredients in a mixing bowl.
  3. Form the patties: Shape the mixture into patties about 1/2-inch thick.
  4. Heat the oil: In a skillet, heat about 1/4 inch of oil over medium heat.
  5. Fry the patties: Cook patties for 3-4 minutes on each side until golden brown.
  6. Drain excess oil: Transfer cooked patties onto a paper towel-lined plate.
  7. Serve warm: Enjoy immediately while hot and crispy.

Notes

For a vegan option, substitute the egg with a flax egg. These patties can also be baked for a lighter option.
