Easy Ground Beef Zucchini Casserole

A comforting and simple ground beef zucchini casserole that’s perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet with olive oil over medium heat for about 5-7 minutes. Season with salt and pepper.
  3. Sauté the chopped onion and minced garlic for 3-4 minutes until translucent.
  4. Add diced tomatoes and sliced zucchini, stir in Italian seasoning and simmer for 5 minutes.
  5. Assemble the casserole in a greased baking dish, layering the beef mixture and cheese.
  6. Bake covered for 25 minutes, then uncovered for an additional 15-20 minutes until cheese is bubbly and golden brown.

Notes

Let the casserole rest for 5 minutes before serving. Pair with a fresh salad and crusty bread.
