  • 1 medium onion (diced)
  • 10 ounces cremini or button mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 1 tablespoon sweet paprika
  • 1 teaspoon smoked paprika (optional)
  • 2 tablespoons all-purpose flour
  • 1 cup vegetable broth
  • ¾ cup sour cream

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the diced onions to the skillet and cook until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Toss in the sliced mushrooms and cook for about 5-7 minutes, until browned.
  5. Sprinkle in the sweet paprika and (optionally) smoked paprika, stirring well.
  6. Sprinkle the flour over the mushroom mixture and stir to combine, cooking for another minute.
  7. Pour in the vegetable broth gradually, stirring constantly, and bring to a gentle simmer for about 3-4 minutes.
  8. Reduce the heat to low, then stir in the sour cream until fully combined.

Notes

For a creamier and richer taste, you can substitute the sour cream with Greek yogurt. Feel free to customize this recipe with proteins or vegetables.
