Cheesy Ground Beef and Zucchini Casserole

A comforting casserole that combines ground beef, zucchini, and cheese for a delicious family meal.

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup cooked rice or pasta (optional)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the chopped onion and minced garlic in olive oil for 3-4 minutes until fragrant.
  3. Brown the ground beef, seasoned with salt, pepper, and Italian seasoning, for 6-8 minutes.
  4. Mix in the sliced zucchinis and cook for 5 minutes until slightly softened.
  5. Combine the diced tomatoes and cooked rice or pasta, and simmer for 3 minutes.
  6. Assemble the casserole in a greased 9×13-inch baking dish by layering half of the beef and zucchini mixture, 1 cup cheese, then the remaining beef mixture and cheese on top.
  7. Bake in the oven for 25-30 minutes until the cheese is bubbly and golden brown.
  8. Let it rest for 5-10 minutes before serving.

Notes

Variety options include adding black beans for a southwestern touch or using spiralized zucchini for a low-carb alternative.
