Shrimp and Vegetable Stir-Fry

A simple, vibrant shrimp and vegetable stir-fry that brings warmth and joy to every meal.

  • 1.5 lb shrimp, peeled and deveined
  • 2 cups snap peas
  • 1 red bell pepper, sliced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced

Instructions

  1. Prepare the ingredients by rinsing the shrimp and slicing the bell pepper into thin strips.
  2. Heat a large skillet or wok over medium-high heat and pour in the sesame oil.
  3. Cook the shrimp in a single layer for about 2-3 minutes on each side until they turn pink and opaque.
  4. Add the snap peas and red bell pepper to the pan and stir-fry for 2-3 minutes.
  5. Bring it all together by returning the shrimp to the pan, adding soy sauce and garlic, and letting it sizzle for another 2 minutes.

Notes

Serve over a bed of steamed rice or quinoa. Add sesame seeds or sliced green onions for extra flair.
