Homemade Peach Crumb Bars

Delightful and comforting peach crumb bars with a buttery, crumbly crust filled with sweet peaches and a sprinkle of cinnamon.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 170 g unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups diced peaches
  • 2 tbsp cornstarch
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Combine the flour, granulated sugar, brown sugar, baking powder, and salt in a large mixing bowl.
  3. Add the softened butter and mix until the mixture resembles coarse crumbs.
  4. Crack in the egg and pour in the vanilla extract; mix until just combined.
  5. Reserve about 1 cup of this mixture for topping.
  6. Press the remaining mixture into the bottom of your prepared baking dish.
  7. Toss the diced peaches with cornstarch, sugar, lemon juice, and cinnamon in a separate bowl.
  8. Spread the peach mixture evenly over the crust.
  9. Sprinkle the reserved crumb mixture over the top of the peaches.
  10. Bake for about 35-40 minutes or until the top is lightly golden brown.
  11. Cool for at least 20 minutes before slicing.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
