Homemade Red Hamburger Relish

A vibrant, zesty relish that elevates your burger experience with fresh ingredients and bold flavors.

Ingredients

  • 2 cups chopped cucumbers (unpeeled)
  • 2 cups chopped sweet bell peppers (red, yellow, orange, or green)
  • 2 cups chopped zucchini
  • 1 cup chopped onion
  • 1/4 cup pickling salt
  • 4 cups chopped seeded peeled tomatoes
  • 3 cups white vinegar
  • 1 tablespoon mustard seeds
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground cloves
  • 2 cups granulated sugar

Instructions

  1. Chop your veggies by finely chopping the cucumbers, peppers, zucchini, and onion.
  2. Combine the chopped veggies with pickling salt in a large bowl, mix well, and let sit for 1-2 hours.
  3. Make the tomato base by combining chopped tomatoes and vinegar in a large pot.
  4. Add the spices—mustard seeds, turmeric, cinnamon, allspice, and cloves—and bring to a gentle boil.
  5. Mix in the rinsed veggies into the tomato base.
  6. Sweeten the mixture with granulated sugar and bring it back to a boil, then reduce to a simmer for about 30 minutes.
  7. Canning the thickened mixture into sterilized jars, leaving 0.5 inches of space at the top.
  8. Process jars in a boiling water bath for 10-15 minutes if preserving, or cool and store in the fridge if enjoying fresh.
