Zucchini Brownies

Deliciously rich and fudgy brownies made with a twist of grated zucchini for added moisture and flavor.

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)
  • For the frosting:
    1/2 cup powdered sugar
    2 tablespoons cocoa powder
    1 tablespoon milk
    1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking dish by greasing an 8×8 inch pan or lining it with parchment paper.
  3. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  4. Combine dry ingredients: whisk the flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
  5. Mix wet ingredients: beat the eggs, granulated sugar, vegetable oil, and vanilla extract in another bowl until smooth.
  6. Combine both mixtures by adding the dry ingredients to the wet, stirring gently until combined.
  7. Fold in the grated zucchini and chocolate chips.
  8. Pour the batter into the prepared baking dish, spreading it evenly.
  9. Bake for about 25–30 minutes or until a toothpick inserted comes out with moist crumbs.
  10. Let them cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before frosting.

Notes

Option to add nuts or experiment with different flours for different textures. Brownies can also be frozen for up to three months.
