Zucchini and Bisquick Squares

Hearty Zucchini and Bisquick Squares are a cozy comfort dish that’s easy to make and perfect for showcasing fresh zucchini from your garden.

  • 2 cups grated zucchini
  • 1 cup Bisquick mix
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup milk
  • 2 eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini using a box grater or food processor and squeeze out excess moisture if needed.
  3. Combine the Bisquick mix, garlic powder, salt, and pepper in a large bowl.
  4. Beat the eggs in a separate bowl, then add milk and shredded cheese, mixing until combined.
  5. Fold the grated zucchini into the wet mixture, then pour it into the dry ingredients and stir until just combined.
  6. Grease a 9×9-inch baking dish or line it with parchment paper, pour in the batter, and smooth it out.
  7. Bake for 25-30 minutes, until the top is golden and a toothpick inserted comes out clean.
  8. Cool for a few minutes before slicing into squares.

Notes

These squares can be served with sour cream or Greek yogurt, alongside a salad, or with grilled chicken. They also freeze well for up to 3 months.
