Chocolate Chip Zucchini Cookies

Delicious and moist cookies that combine chocolate chips with grated zucchini for a fun and nutritious treat.

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a baking sheet lined with parchment paper.
  3. Grate your zucchini and squeeze out excess moisture.
  4. Mix the butter, brown sugar, and granulated sugar until fluffy, then add egg and vanilla.
  5. Combine the flour, oats, baking soda, and salt in a separate bowl.
  6. Fold the dry mixture into the wet mixture until just combined.
  7. Add the zucchini and chocolate chips, folding gently.
  8. Scoop tablespoon-sized dough onto the baking sheet.
  9. Bake for 12-15 minutes until edges are golden.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

These cookies can be frozen for up to three months. Experiment with different mix-ins to suit your taste!
