Easy Zucchini Pie

A comforting and nostalgic zucchini pie that blends family traditions with deliciousness.

  • 2 Tablespoons Olive Oil
  • 4 Cups Thinly Sliced Zucchini
  • 1 Cup Chopped Onions
  • 2 Tablespoons Dried Parsley Flakes
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon Garlic Powder
  • 1/4 Teaspoon Dried Basil Leaves
  • 1/4 Teaspoon Dried Oregano Leaves
  • 2 Eggs, Well Beaten
  • 8 oz Full-Fat Mozzarella Cheese (approximately 2 cups, shredded)
  • 8 oz Pillsbury Refrigerated Crescent Dinner Rolls (1 can)
  • 2 Teaspoons Prepared Mustard

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onions in olive oil for 3-5 minutes until translucent.
  3. Add zucchini and cook for 5-7 minutes, until tender.
  4. Season with parsley, salt, pepper, garlic powder, basil, and oregano.
  5. Combine eggs and mozzarella in a bowl, then stir in the zucchini mixture.
  6. Prepare the crust with the crescent rolls in a pie dish.
  7. Spread mustard over the crust.
  8. Pour the zucchini filling into the crust.
  9. Bake for 25-30 minutes until golden brown.
  10. Cool for 10 minutes before slicing.
