Mouthwatering Mediterranean Chicken Wraps

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pita breads
  • 2 cups romaine lettuce, shredded
  • 1 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 3/4 cup tzatziki sauce
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Marinade the chicken: In a bowl, mix together the olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and pepper. Add the chicken breasts to the bowl, coating them thoroughly with the marinade. Let them marinate for at least 30 minutes in the fridge.
  2. Cook the chicken: Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side, until fully cooked. Remove from heat and let the chicken rest for 5 minutes before slicing.
  3. Prepare the wraps: While the chicken is resting, prepare your veggies. Warm the pita breads in a pan for about 30 seconds on each side.
  4. Assemble your wraps: Slice the chicken into strips. Layer the shredded lettuce, cucumber slices, red onion, and chicken on each pita. Drizzle with tzatziki sauce and sprinkle with fresh parsley. Wrap tightly and enjoy!
