No-Bake Lemon Pie

A refreshing, easy-to-make no-bake lemon pie that captures the essence of summer with its creamy texture and zesty flavor.

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • 1 (8 oz) package cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • Lemon slices for garnish

Instructions

  1. Create the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  2. Press and Chill: Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Chill for at least 30 minutes.
  3. Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth, gradually adding sweetened condensed milk.
  4. Add the Zesty Goodness: Incorporate fresh lemon juice, lemon zest, and vanilla extract, blending until well combined.
  5. Fold in the Whipped Cream: Carefully fold in the whipped cream until fluffy.
  6. Fill the Crust: Pour the creamy filling into the chilled pie crust and smooth the top.
  7. Chill Again: Cover and refrigerate for at least 4 hours, or overnight.
  8. Garnish & Serve: Top with whipped cream and garnish with lemon slices before serving.

Notes

For a sweeter filling, adjust the amount of sweetened condensed milk. Can be frozen for later enjoyment.
