  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 container (8 oz) sugar-free whipped topping (like Cool Whip or homemade)

Instructions

  1. Combine almond flour, melted butter, and powdered sugar substitute until it resembles a wet sand texture.
  2. Transfer the mixture to a 9-inch pie dish and press it evenly across the bottom and sides.
  3. Place the pie crust in the refrigerator for 15-20 minutes to firm up.
  4. Beat the softened cream cheese until smooth in a large mixing bowl.
  5. Mix in powdered sugar substitute, lemon juice, lemon zest, and vanilla extract until creamy.
  6. Fold the sugar-free whipped topping into the cream cheese mixture gently.
  7. Take the crust out of the fridge and fill it with the lemon filling, spreading it evenly.
  8. Cover the pie with plastic wrap and refrigerate for at least 4 hours or overnight.
  9. Garnish with additional lemon zest or fresh berries before serving.
