Zucchini Brownies with Chocolate Frosting

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate frosting (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab an 8×8-inch baking pan, grease it, or line it with parchment paper.
  3. Using your grater or food processor, grate the zucchini and squeeze out excess moisture.
  4. In a large mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
  5. In another bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until smooth.
  6. Pour the wet mixture into the dry ingredients, adding the grated zucchini last, and gently fold everything together.
  7. Pour your batter into the prepared baking dish and spread it out evenly.
  8. Let it bake for 25-30 minutes until a toothpick inserted comes out with a few moist crumbs.
  9. Once baked, let the brownies cool completely and frost them once cool, then cut into squares.

Notes

For extra flavor, consider adding walnuts, peppermint extract, or even a pinch of cayenne pepper for a kick.
