Zucchini Brownies

Deliciously rich and fudgy brownies made with zucchini, perfect for satisfying your sweet tooth while sneaking in some veggies.

  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder

  • 2 cups shredded zucchini
  • 1 cup chocolate chips (optional)
  • 2 cups powdered sugar (for frosting)
  • 4 tablespoons unsweetened cocoa powder (for frosting)
  • 1/4 cup salted butter (melted, for frosting)
  • 1/4 cup milk (for frosting)
  • 2 teaspoons vanilla extract (for frosting)

Instructions

  1. Preheat Your Oven: Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Mix the Wet Ingredients: Combine the granulated sugar and oil, whisking until blended. Add the vanilla extract and stir in.
  3. Combine the Dry Ingredients: In a separate bowl, mix the flour, cocoa powder, baking soda, and salt.
  4. Fold in the Zucchini: Stir the shredded zucchini into the wet ingredients.
  5. Combine Wet and Dry: Gently add the dry mixture to the wet ingredients and fold until just combined.
  6. Optional Chocolate Chips: Fold in chocolate chips if desired.
  7. Bake the Brownies: Pour the batter into the prepared baking dish and bake for 25-30 minutes.
  8. Cool and Frost: Let brownies cool, then prepare frosting and spread it on top.

Notes

To serve, cut into generous squares and consider serving with vanilla ice cream or whipped cream.
