  • 1 teaspoon maple extract
  • 1 ½ cups shredded zucchini
  • 1 cup quick oats
  • 1 cup chopped walnuts
  • 1 cup milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt.
  3. Cream the butter with the granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and maple extract until well combined.
  5. Shred the zucchini and squeeze out excess moisture.
  6. Combine the dry ingredients with the wet mixture until just combined.
  7. Fold in the zucchini, oats, walnuts, and chocolate chips.
  8. Scoop spoonfuls of dough onto a lined baking sheet, bake for 10-12 minutes.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies can be made with variations like adding cocoa powder for chocolate flavor or using pumpkin instead of zucchini.
