Chicken with Peppers and Potatoes in Tomato Sauce

  • 2 Boneless, skinless chicken breasts
  • 3 Bell peppers (red, yellow, green, sliced)
  • 2 Potatoes (Russet or Yukon Gold, chopped)
  • 1 can Tomato sauce
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • Herbs (Thyme or Basil)

Instructions

  1. Prep your ingredients: Wash, peel, and chop potatoes. Slice bell peppers and onion, and mince garlic.
  2. Heat up the olive oil in a large skillet over medium heat.
  3. Sear the chicken breasts for about 4-5 minutes on each side until golden brown.
  4. Add the chopped onion to the pan and stir for 2-3 minutes until translucent.
  5. Toss in the minced garlic and sauté for 30 seconds until fragrant.
  6. Mix in the bell peppers and potato chunks. Cook for another 5 minutes.
  7. Pour in the tomato sauce and bring to a gentle simmer.
  8. Season with herbs, salt, and pepper, stirring to combine.
  9. Simmer for 20-25 minutes, covering the skillet until chicken is cooked through.
  10. Check for doneness; chicken should reach 165°F.
  11. Serve with crusty bread or over rice.

Notes

For a thicker sauce, let it simmer uncovered for an extra 5 minutes. Adjust seasonings to taste.
