Pork Tenderloin with Roasted Vegetables

A comforting and savory dish of juicy pork tenderloin paired with vibrant roasted vegetables, reminiscent of cozy family gatherings.

  • 1.5 lb pork tenderloin
  • 2 cups Brussels sprouts, halved
  • 2 carrots, sliced
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the pork tenderloin dry with paper towels.
  3. Mix olive oil, rosemary, salt, and pepper in a small bowl. Rub half of this mixture over the pork tenderloin and toss the Brussels sprouts and carrots with the remaining mixture.
  4. Place the seasoned pork on one side of a baking sheet and spread the vegetables on the other side.
  5. Pop the baking sheet into the preheated oven and let it roast for about 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  6. Let the pork rest for 5-10 minutes after roasting before slicing.
  7. Slice the pork into medallions and plate it with the roasted veggies.

Notes

For extra flavor, consider adding minced garlic to the vegetable mix or a glaze of balsamic vinegar and honey during the last few minutes of roasting.
