Easy Shredded Zucchini Casserole

A heartwarming and hearty zucchini casserole, perfect for any occasion.

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 4 cups shredded zucchini
  • 1 tsp salt
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (optional)
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 2 tbsp olive oil or melted butter
  • Fresh parsley or chives, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté your chopped onion in olive oil for about 3-4 minutes until translucent. Add minced garlic and sauté for an additional minute.
  3. Shred the zucchini using a box grater or food processor, then squeeze out excess moisture.
  4. Mix the sautéed onion and garlic with shredded zucchini, eggs, salt, black pepper, cheddar cheese, Parmesan cheese, and breadcrumbs (if using) in a large mixing bowl.
  5. Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
  6. Drizzle the top with olive oil or melted butter.
  7. Bake for about 30-35 minutes until the top is lightly golden.
  8. Garnish with freshly chopped parsley or chives before serving.

Notes

You can prepare the casserole a day in advance and keep it covered in the fridge. For a gluten-free option, substitute breadcrumbs with crushed cornflakes.
