Hearty Sweet Potato and Zucchini Hash with Ground Beef

A nostalgic and hearty dish featuring sweet potatoes, zucchini, and ground beef, perfect for cozy dinners.

  • 450 g ground beef
  • 2 medium zucchinis (diced)
  • 1 large sweet potato (peeled and cubed)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (sliced)
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and black pepper (to taste)
  • 2 tbsp olive oil
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Heat the olive oil in a large frying pan or skillet over medium heat.
  2. Sauté the finely chopped onion for 2-3 minutes until translucent, then add the sliced garlic and stir for another 30 seconds.
  3. Cook the ground beef, breaking it apart, until browned and fully cooked through, about 5-7 minutes.
  4. Add the cubed sweet potato and stir, then cover the pan and let cook for about 10 minutes.
  5. Stir in the diced zucchini, smoked paprika, oregano, salt, and pepper, then cook uncovered for another 5-7 minutes.
  6. Taste the dish and adjust seasonings as needed.
  7. Remove from heat and garnish with fresh parsley before serving.

Notes

This dish can be easily adapted with different proteins or made vegan by using lentils and extra veggies.
