One-Pan Turkey Taco Skillet

A quick and hearty One-Pan Turkey Taco Skillet perfect for busy weeknights, packed with flavors and nostalgia.

  • 1 lb ground turkey
  • 1 cup rice, uncooked
  • 2 cups chicken broth
  • 1 can black beans, drained
  • 1 cup corn
  • 2 tbsp taco seasoning
  • 1/2 cup shredded cheese

Instructions

  1. Cook the turkey: In a large skillet over medium heat, add a drizzle of olive oil and throw in the ground turkey. Use a wooden spoon to break it apart as it cooks, about 5-7 minutes until browned.
  2. Add the rice and broth: Once the turkey is browned, pour in the uncooked rice and chicken broth. Give it a good stir to combine everything beautifully.
  3. Mix in the beans and corn: Next, add in the drained black beans and corn, mixing well. Sprinkle the taco seasoning over the top, and give it a final stir.
  4. Let it simmer: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover it, and let it simmer for about 18-20 minutes, or until the rice is tender.
  5. Add the cheese: After the rice is cooked, remove the skillet from heat and sprinkle the shredded cheese on top. Cover the skillet with a lid for a few minutes to let the cheese melt beautifully.

Notes

For additional flavor, garnish with cilantro, diced avocados, or sour cream. Great served with warm tortillas or tortilla chips.
