Cozy Zucchini Casserole

A heartwarming zucchini casserole packed with flavor and nutrition, perfect for a comforting meal.

Ingredients

  • 4 medium zucchini, sliced
  • 1 onion, chopped
  • 2 cups shredded carrots
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your veggies by slicing the zucchinis and chopping the onion.
  3. Combine the zucchini, onion, and shredded carrots in a large bowl.
  4. Add the beaten eggs, milk, garlic powder, Italian seasoning, salt, and pepper to the veggie mix and stir.
  5. Fold in half of the shredded cheese.
  6. Gently fold in the breadcrumbs.
  7. Transfer the mixture to a greased 9×13 inch casserole dish.
  8. Top with the remaining cheese.
  9. Bake for 30-35 minutes until bubbly and golden brown.
  10. Let the casserole rest for 10 minutes before serving.
