Daube à la Provençale

A hearty and comforting Provençal stew made with tender beef, red wine, and aromatic herbs.

Ingredients

  • 1.5 kg beef (chuck or brisket)
  • 1 bottle red wine
  • 2 onions, chopped
  • 2 carrots, sliced
  • 3 garlic cloves, minced
  • 2 sprigs of thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Olive oil
  • Beef stock (optional)

Instructions

  1. Prep your ingredients: Start by gathering all your ingredients. Chop the onions, slice the carrots, and mince the garlic.
  2. Brown the beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef in batches and sear until browned on all sides.
  3. Sauté the aromatics: Remove the beef and add chopped onions to the pot. Sauté until translucent, then add the carrots and garlic. Cook for 4 minutes.
  4. Deglaze with wine: Pour in the red wine, scraping the bottom of the pot. Let it simmer for about 5 minutes.
  5. Add the beef back to the pot, along with thyme, bay leaves, and any reserved juices.
  6. Pour in stock if using, cover the pot, and bring to a boil. Then reduce heat to low.
  7. Let it simmer for 150-180 minutes until the beef is tender and flavors meld.
  8. Adjust seasonings to taste before serving.

Notes

This dish can be made a day ahead for better flavor development. It freezes beautifully for up to three months.
