Boeuf Mijoté aux Pommes de Terre

A hearty and cozy French beef stew with potatoes, perfect for chilly evenings.

  • 1 kg beef stew meat
  • 500 g potatoes, peeled and diced
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start by gathering and measuring out all your ingredients.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Once hot, add the beef stew meat in batches and brown on all sides for about 4-5 minutes per batch.
  3. Remove the browned beef from the pot and set aside. In the same pot, add the chopped onions and sliced carrots. Sauté for about 5 minutes until the onions are translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Pour in the red wine and scrape up any browned bits stuck to the bottom. Allow it to simmer for about 2-3 minutes.
  5. Return the browned beef to the pot. Add in the beef broth, diced potatoes, thyme, salt, and pepper. Stir and bring the mixture to a gentle boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for at least 120 minutes, stirring occasionally.
  7. Taste and adjust the seasoning if needed.
  8. Once ready, scoop the stew into bowls, garnish with fresh parsley, and enjoy.

Notes

This dish is even better the next day, so feel free to make it ahead of time.
