Poulet Mijoté au Pain d’Épices, Abricots Secs et Miel

A heartwarming dish featuring tender chicken simmered in spices, dried apricots, and honey, perfect for cozy gatherings.

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 2 cups chicken broth
  • 1 cup dried apricots, chopped
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.
  2. Pat the chicken thighs dry and season with salt and pepper.
  3. Add the chicken to the pot, skin-side down. Sear for about 5-7 minutes until golden brown. Flip and sear for another 5 minutes. Remove and set aside.
  4. Add a bit more olive oil if needed to the same pot.
  5. Cook the onion for about 5 minutes until softened.
  6. Stir in the garlic, ginger, cinnamon, and cumin. Sauté for about 1 minute until fragrant.
  7. Pour in the chicken broth and bring to a gentle simmer.
  8. Add the dried apricots and honey, stirring to combine.
  9. Return the seared chicken back to the pot, skin-side up.
  10. Cover and simmer over low heat for about 30-40 minutes or until the chicken is tender and cooked through.

Notes

Feel free to substitute chicken with chickpeas or tofu for a vegan version. This dish can be made ahead of time and tastes even better the next day.
