Chunky Kohlrabi Soup

A hearty and comforting soup made with kohlrabi, onion, garlic, and a mix of vegetables, perfect for sharing with loved ones.

  • 1 large kohlrabi, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup carrots, diced
  • 1 cup potatoes, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: yogurt for serving

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Toss in the chopped onion and sauté for about 5 minutes, until it’s translucent and fragrant. Then, add the minced garlic and cook for an additional minute.
  2. Add the vegetables: Next, add the diced kohlrabi, carrots, and potatoes to the pot. Stir them in well for about 3 minutes.
  3. Pour in the broth: Now it’s time to introduce the vegetable broth to the veggie medley. Bring the mixture to a gentle boil, then lower the heat and let it simmer, covered for about 20-25 minutes.
  4. Season the soup: After the veggies have simmered to perfection, season the soup with salt and pepper to your liking.
  5. Serve it up: Once the vegetables are tender, you can either keep the soup chunky or blend it for a smoother texture.
  6. Garnish: Serve the soup hot, topped with a dollop of yogurt if desired.

Notes

This soup can be stored in the fridge for about 3-4 days and freezes well for up to 3 months without the yogurt topping.
