Porc Mijoté au Vin Rouge

A comforting French stew featuring tender pork simmered in rich red wine and paired with colorful vegetables that warms the soul.

  • 500g of Pork Pieces (shoulder or leg cuts)
  • 1 Bottle of Red Wine (Cabernet Sauvignon or Merlot)
  • 2 Onions (yellow or white)
  • 3 Carrots (fresh and vibrant)
  • 2 Garlic Cloves (fresh or garlic powder)
  • 500ml of Meat Broth (beef or vegetable)
  • 2 Tablespoons of Flour (all-purpose or cornstarch)
  • 2 Bay Leaves
  • Fresh Thyme
  • Olive Oil (for browning)
  • Salt and Pepper (to taste)

Instructions

  1. Sear the pork: In a large pot, heat olive oil over medium-high heat. Season the pork with salt and pepper, browning it on all sides (about 4-5 minutes). Remove and set aside.
  2. Sauté the vegetables: In the same pot, add chopped onions and carrots, cooking for about 5 minutes. Add garlic and sauté for another minute.
  3. Make it floury: Sprinkle flour over the veggies and stir, cooking for an additional 2 minutes.
  4. Pour in the wine: Carefully add red wine, scraping any browned bits from the pot. Simmer for about 5 minutes.
  5. Bring back the pork: Add seared pork back, bay leaves, thyme, and meat broth until pork is covered.
  6. Simmer away: Bring to a boil, then reduce heat to low and cover, simmering for 1.5 to 2 hours.
  7. Final touches: Taste and season with salt and pepper. Remove bay leaves and thyme sprigs before serving.

Notes

Serve in wide, shallow bowls with fresh thyme or parsley. Pair with crusty French bread and a glass of red wine.
