Pasta Salad Cups

A fresh and flavorful pasta salad served in cute cups, perfect for any gathering.

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup black olives
  • 1/4 cup chopped fresh parsley
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and rinse under cool water to stop the cooking process and set aside.
  2. Prep the veggies: While the pasta is cooling, chop up your cherry tomatoes, cucumber, and olives.
  3. Mix it all up: In a large mixing bowl, add your cooled rotini pasta, cherry tomatoes, diced cucumber, olives, and chopped parsley. Drizzle your Italian dressing over the top and gently toss everything together until well mixed.
  4. Season to perfection: Sprinkle in salt and freshly cracked pepper to taste.
  5. Chill and serve: Cover your bowl with plastic wrap and pop it in the refrigerator for at least 30 minutes. When you’re ready to serve, scoop the salad into your chosen serving cups.
