Peach Cake with Brown Sugar Frosting

A delightful peach cake topped with rich brown sugar frosting, perfect for summer gatherings.

  • 1 box yellow cake mix
  • 3 eggs
  • 1 cup water
  • 2 cups peaches (fresh or canned, diced)
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the yellow cake mix, eggs, and water in a large mixing bowl for about 2 minutes.
  3. Gently fold in the remaining diced peaches into the batter.
  4. Pour the batter into a greased and floured 9×13 baking pan.
  5. Bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool the cake in the pan for 15 minutes, then on a wire rack until completely cool.
  7. Make the frosting by beating together softened butter and brown sugar until creamy, then add powdered sugar and vanilla.
  8. Frost the cooled cake with the brown sugar frosting.
