  • 1/2 teaspoon vanilla extract
  • 2 large ripe peaches (peeled, pitted, and cut into 1/4-inch pieces)
  • 1/3 cup peach preserves
  • 3 tablespoons sanding sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: whisk together the flour, salt, and baking soda.
  3. Cream the butter and sugars until light and fluffy.
  4. Add the egg and vanilla, mixing until well incorporated.
  5. Combine the dry and wet ingredients until just mixed.
  6. Fold in the peaches and preserves gently.
  7. Scoop rounded balls of dough onto a parchment-lined sheet.
  8. Sprinkle with sanding sugar and cinnamon.
  9. Bake for 12-14 minutes until edges are golden.
  10. Cool on baking sheet before transferring to a wire rack.

Notes

Chilling the dough can help prevent spreading. You can use gluten-free flour or substitute various sugars as needed.
