The Best Ever Peach Muffins

These peach muffins are soft, fluffy, and bursting with fresh peach goodness—a delightful taste of summer in every bite!

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh peaches, diced
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your muffin pan by greasing it or using paper liners.
  3. Combine the dry ingredients in a large mixing bowl (flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon).
  4. Mix the wet ingredients in another bowl (melted butter, eggs, milk, and vanilla extract).
  5. Bring the wet mixture into the dry ingredients and fold gently.
  6. Add the diced peaches and gently fold them into the batter.
  7. Divide the batter among muffin cups, filling each about 2/3 full.
  8. Bake for 18-20 minutes until golden brown.
  9. Cool the muffins in the pan for 5 minutes before transferring to a wire rack.

Notes

For a whole grain option, substitute whole wheat flour. Mint or mint substitution gives a different profile.
