Homemade Peach Scones

Delicious peach scones that capture the sweetness of summer with ripe peaches and a flaky texture.

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup fresh peaches, diced
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Fold in the peaches until evenly distributed.
  5. Add the cream and vanilla, folding gently until just combined.
  6. Shape the dough into a circle about 1-inch thick and cut into wedges.
  7. Transfer to a baking sheet lined with parchment and bake for 15-20 minutes until golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a twist, add spices like cinnamon or nutmeg, or try mixing in blueberries. These scones freeze well; bake directly from the freezer.
