Perfect Chicken Pasta Salad with Avocado, Tomato, and Basil

A delightful chicken pasta salad packed with fresh flavors from avocado, tomato, and basil. Perfect for any occasion!

Ingredients

  • 2 cups cooked pasta (rotini or penne)
  • 1 cup cooked chicken, diced
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water and cook pasta according to package instructions until al dente. Reserve a cup of pasta water.
  2. Prepare the Chicken: Dice leftover or cooked chicken into bite-sized pieces.
  3. Chop Your Veggies: Dice avocado, halve cherry tomatoes, and chop fresh basil.
  4. Mix the Salad: In a large mixing bowl, combine pasta, chicken, avocado, tomatoes, and basil.
  5. Dress the Salad: Whisk olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the salad and mix.
  6. Toss & Taste: Gently toss until well combined. Adjust seasoning to taste.
  7. Chill & Serve: Refrigerate for about 30 minutes before serving for best flavor.
