  • 1 zucchini, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup frozen peas

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the chopped onion for about 5 minutes until translucent, then add minced garlic and sauté for another minute.
  3. Add the chopped carrots, celery, and bell pepper, sautéing for about 5 minutes until softened.
  4. Incorporate the chopped zucchini and diced tomatoes, stirring to combine.
  5. Pour in the vegetable broth and stir to mix everything.
  6. Season with dried thyme, bay leaf, salt, and pepper.
  7. Let the stew simmer on low for about 30 minutes, stirring occasionally.
  8. Finish by adding frozen peas and cooking for an additional 5 minutes.
  9. Serve in warm bowls, removing the bay leaf before enjoying.

Notes

For a creamier texture, try adding coconut milk or a dollop of sour cream just before serving.
