Sweet Hawaiian Chicken in the Slow Cooker

  • 240 ml (1 cup) pineapple juice
  • 200 g (about 7 oz) fresh or canned pineapple chunks, drained
  • 80 ml (1/3 cup) soy sauce
  • 60 g (1/3 cup) brown sugar
  • 30 ml (2 tbsp) ketchup
  • 30 ml (2 tbsp) rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced
  • 10 g (about 1 tbsp) freshly grated ginger
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 15 ml (1 tbsp) vegetable oil
  • 0.5 tsp fine salt
  • 0.5 tsp ground black pepper
  • 1 tbsp cornstarch
  • 30 ml (2 tbsp) cold water
  • Sesame seeds (for garnish)
  • Chopped green onions or cilantro (for garnish)
  • Basmati or Thai rice, quinoa, or Asian noodles (for serving)

Instructions

  1. Prep your veggies and chicken by slicing onions and bell peppers.
  2. Sauté the vegetables in a skillet with vegetable oil for about 5 minutes until softened.
  3. Layer the ingredients in the slow cooker with chicken thighs, sautéed veggies, pineapple chunks, minced garlic, and grated ginger.
  4. Combine pineapple juice, soy sauce, brown sugar, ketchup, and vinegar in a bowl and pour over the chicken.
  5. Season with salt and black pepper, then stir gently to coat the chicken.
  6. Cook on low for about 360-420 minutes or high for 180-240 minutes until the chicken is tender.
  7. Thicken the sauce by mixing cornstarch with cold water and adding it to the slow cooker, cooking on high for an additional 15-20 minutes.
  8. Serve the sweet Hawaiian chicken over rice, quinoa, or noodles, garnished with sesame seeds and chopped green onions or cilantro.
