A delicious, quick Greek chicken wrap featuring juicy chicken, homemade tzatziki, and sun-dried tomatoes, perfect for lunch or dinner.

Ingredients

Scale
  • 8 oz boneless, skinless chicken breast, sliced thinly
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1/4 cup chopped sun-dried tomatoes (packed in oil preferred)
  • 1/2 cup Greek yogurt (full-fat preferred)
  • 1/2 cup finely grated and drained cucumber
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill (optional)
  • 2 large flour tortillas
  • 2 tbsp thinly sliced red onion
  • 1 cup fresh spinach or mixed greens

Instructions

  1. Prep the chicken: Start by slicing your chicken breast into thin strips.
  2. Heat the pan: In a medium skillet, heat the extra virgin olive oil over medium-high heat.
  3. Season and cook the chicken: Toss the sliced chicken into the skillet. Sprinkle with garlic powder, oregano, salt, and black pepper. Cook for about 5-7 minutes until the chicken is golden brown and cooked through.
  4. Prepare the tzatziki: Mix together Greek yogurt, grated cucumber, lemon juice, and dill in a bowl. Season with salt to taste.
  5. Assemble the wraps: Take a tortilla and spread a layer of tzatziki. Add spinach, sliced red onion, sun-dried tomatoes, and warm chicken.
  6. Wrap it up: Fold in the sides and roll tightly from the bottom up.
  7. Slice and serve: Halve the wraps diagonally and serve with additional tzatziki for dipping.

Notes

For extra sturdiness, lightly toast the tortillas in the skillet before assembling.
