Quinoa Stuffed Peppers

  • 4 bell peppers (any color)
  • 1.5 cups cooked quinoa
  • 1 can black beans (15 oz), drained
  • 1 cup corn (frozen or canned)
  • 1/2 cup salsa
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by slicing the tops off and removing the seeds.
  3. Get your quinoa cooking by combining 1 cup of quinoa with 2 cups of water or vegetable broth in a pot. Bring it to a boil and simmer for about 15 minutes.
  4. Mix the filling in a large bowl with cooked quinoa, drained black beans, corn, and salsa.
  5. Stuff each bell pepper generously with the quinoa mixture.
  6. Top with shredded cheese if desired.
  7. Bake for about 25-30 minutes until the peppers are tender and the cheese is melted.
