  • 1 cup Greek yogurt
  • 1 cup diced rhubarb
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your muffin tin with paper liners or non-stick spray.
  3. Mix dry ingredients: whisk flour, baking powder, baking soda, and salt in a large bowl.
  4. Combine wet ingredients: mix Greek yogurt, sugar, melted butter, eggs, and vanilla in another bowl.
  5. Bring wet and dry ingredients together, mixing until just combined.
  6. Add the diced rhubarb gently to the batter.
  7. Fill muffin cups about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.
