Peach Raspberry Jam

A delightful spread capturing the essence of summer with sweet peaches and tangy raspberries.

  • 2 cups peaches, peeled and chopped
  • 2 cups raspberries, fresh or frozen
  • 2 cups sugar
  • 1/4 cup lemon juice
  • 1 packet pectin

Instructions

  1. Prepare your ingredients by peeling and chopping the peaches into small pieces. Measure out the sugar and lemon juice, and have your pectin ready.
  2. Combine the chopped peaches and raspberries in a large pot. You may mash them for a smoother texture if desired.
  3. Stir in the lemon juice and sprinkle in the pectin, mixing well to avoid clumping.
  4. Add the sugar and turn the heat to medium-high. Stir until the sugar is dissolved.
  5. Boil the mixture, stirring constantly, until it reaches a full rolling boil, about 1 to 2 minutes.
  6. Test for consistency using a cold plate test. If it holds its shape, it’s ready!
  7. Jar the jam into sterilized jars, leaving a quarter-inch headspace at the top.
  8. Cool the jars at room temperature for 24 hours before storing in the fridge or pantry.

Notes

Enjoy the jam on toast, pancakes, or as a pastry filling. Variations include adding spices or using different fruits.
