Zucchini Onion Pie

A deliciously simple pie made with fresh zucchinis and onions, embodying warmth and comfort.

  • 2 medium zucchinis, sliced
  • 1 medium onion, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice zucchinis and onions thinly.
  3. Sauté onions in olive oil with a pinch of salt until soft.
  4. Add sliced zucchinis and sauté for an additional 3-4 minutes.
  5. Whisk together milk, eggs, flour, salt, pepper, and garlic powder in a bowl.
  6. Stir in shredded cheddar cheese until well combined.
  7. Pour the sautéed vegetables into the egg and cheese mixture and mix well.
  8. Pour the filling into a greased pie dish and bake for 40-45 minutes until set.
  9. Cool for 10-15 minutes before slicing and serving.

Notes

Customize with various ingredients based on your preferences. Can be made ahead of time and frozen.
