Chicken Ragoût

A heartwarming slow cooker chicken ragoût that combines tender chicken and flavorful vegetables for a cozy meal.

  • 2 lbs chicken thighs
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prep the chicken: Rinse chicken thighs under cold water and pat dry. In a skillet, heat olive oil over medium-high and brown the chicken for about 4-5 minutes on each side.
  2. Sauté the veggies: Once chicken is done, toss in the onion and sauté for 2-3 minutes. Add garlic, carrots, and celery; cook for another 3-4 minutes.
  3. Combine ingredients: Transfer everything to the slow cooker. Add browned chicken, diced tomatoes, chicken broth, thyme, and bay leaf.
  4. Slow cook to perfection: Cover and set cooker to low for 6-8 hours or high for 3-4 hours.
  5. Finishing touches: About 30 minutes before serving, adjust seasoning if needed or add cornstarch for a thicker consistency.

Notes

Serve garnished with fresh parsley and crusty bread or over mashed potatoes.
