Soda Chili, Lime, and Pineapple Bundt Cake

A refreshing summer bundt cake with a delightful blend of sweet pineapple, zesty lime, and a hint of chili.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 cup unsweetened crushed pineapple, drained
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Juice and zest of 2 limes
  • 2 teaspoons chili powder
  • ½ cup lemon-lime soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the dry ingredients (flour, baking powder, baking soda, salt, and chili powder) in a mixing bowl.
  3. Cream the softened butter and sugar until light and fluffy, about 3-5 minutes.
  4. Add in the eggs, vanilla, lime juice, and zest. Mix until well blended.
  5. Gradually add the dry mixture into the wet ingredients, alternating with the crushed pineapple and soda.
  6. Pour the batter into your prepared bundt pan.
  7. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before inverting it onto a serving plate.

Notes

Garnish with fresh lime slices and mint leaves, or serve with whipped cream or vanilla ice cream for the perfect dessert experience.
