Soft Zucchini Cookies That Make Vegetables Irresistible!

  • 1/2 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Zucchini, grated
  • 1/2 cup Chopped Walnuts
  • 1/2 cup Raisins

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the flour, baking soda, salt, and cinnamon in a medium bowl.
  3. Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract, beating until fully combined.
  5. Incorporate the grated zucchini into the mixture.
  6. Combine the dry ingredients with the wet mixture until just combined.
  7. Add the chopped walnuts and raisins.
  8. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, leaving space to spread.
  9. Bake for 10-12 minutes until edges are golden and centers are set.
  10. Cool on a baking sheet before transferring to a wire rack.

Notes

Serve warm with vanilla ice cream or pack for lunch. These cookies can be made vegan or gluten-free.
