Southern Peach Bread

A moist, sweet bread bursting with juicy peaches, reminiscent of summer and family gatherings.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and chopped fresh peaches
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C).
  2. Prepare your baking pan: Grease a standard loaf pan with butter or line it with parchment paper.
  3. Mix the dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Cream the butter and sugar: Beat the softened butter and sugar together until light and fluffy.
  5. Add the eggs and vanilla: Mix in the eggs one at a time, then beat in the vanilla.
  6. Combine the mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the peaches and pecans: Gently fold in the chopped peaches and optional pecans.
  8. Pour it into the pan: Transfer the batter into your prepared loaf pan.
  9. Bake: Pop it in the oven and bake for 60–70 minutes, or until a toothpick comes out clean.
  10. Cool down: Let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Serve warm or at room temperature, optionally with butter or cream cheese. Try variations by adding berries or using maple syrup instead of sugar.
