Southern Peach Cobbler

  • 1 cup sugar
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine sliced peaches, 1/2 cup sugar, lemon juice, and vanilla extract in a mixing bowl and let sit.
  3. Mix flour, remaining 1/2 cup sugar, baking powder, and salt in another bowl. Add milk and melted butter, stirring until just combined.
  4. Pour the cobbler batter into a greased baking dish, then spoon the peach mixture with juices on top without stirring.
  5. Bake for 40-45 minutes or until the top is golden brown and bubbly.
  6. Cool for 10-15 minutes before serving warm, optionally with ice cream.
