Scale
  • 2 pieces ribeyes
  • To taste salt and pepper
  • 4 ears corn

  • 1 piece lime
  • 8 small tortillas

Instructions

  1. Prepare the Ribeye: Season your ribeye steaks generously with salt and pepper. Let them sit at room temperature while you get everything else ready.

  4. Prepare the Elote Sauce: In a small bowl, mix together mayonnaise, sour cream, lime juice, and chopped cilantro. Adjust seasoning as desired.
  5. Slice the Corn: Cut the kernels off the cob into a large bowl after cooling.
  6. Assemble the Tacos: Warm tortillas on the grill, layer corn kernels, steak slices, drizzle elote sauce, and add cotija cheese and jalapeño.
  7. Squeeze Lime & Enjoy: Drizzle fresh lime juice over the tacos before serving.
