Peach Crumb Bars

  • 2 cups fresh peaches, peeled and diced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the diced peaches, 1/2 cup of granulated sugar, lemon juice, vanilla extract, and cornstarch.
  3. Stir gently until the peaches are well-coated.
  4. In a large bowl, combine the flour, oats, remaining sugar, brown sugar, baking powder, salt, and cinnamon.
  5. Add the softened butter and mix until the batter resembles coarse crumbs.
  6. Grease a 9×9-inch baking dish or line it with parchment paper.
  7. Press about two-thirds of the crumb mixture into the bottom of the dish to create a firm crust.
  8. Carefully spoon your peach mixture onto the crust.
  9. Sprinkle the remaining crumb mixture over the peach filling.
  10. Slide your baking dish into the preheated oven and bake for 45-50 minutes.
  11. Once baked, let the bars cool in the pan for at least 30 minutes.
  12. Cut into squares and enjoy warm, or allow them to cool completely.

Notes

Serve with powdered sugar, warm caramel sauce, or a scoop of vanilla ice cream for an extra treat.
